Have you tried making your own bread with a breadmaker?

Mine has a program for gluten free bread but I haven't tried it as I don't need to but the ordinary bread that it makes is far superior to shop bought bread so perhaps the gluten free variety is too

It's the flour. Maize, rice,and others. All flours in there own right but sadly not wheat or rye. The flavour or texture cannot be imitated to any success but schar seem to have gotten the best it can be. I did consider that option but tbh patience and shelf life are lacking. He's 21 and isn't too fussed. Ketchup, butter and half a pig seem to work for him
