Nobody is bonkers for keeping an open mind.

You hear religious types justifying the possibility of God by saying that you can't disprove his existence but having insufficient knowledge of the existence of something makes it no more or less likely.

In the religious case, it is certainly a spurious argument because we can trace the origins of monotheism back and see how it evolved from something completely different.
Any creator being that could exist is not the God of the Bible or any other religious text.
With Alien life, we know that its existence is a virtual certainty, but that is all we can realistically presume.
We just don't know enough to claim certainty beyond that.
