The Tapas restaurant in Purley has packed them in for years but the one in Purley is a sort of bar as well as a restaurant for people who don't want to go to the pub. JS has probably got advice off the Argentinian Steak owner. He has 6 restaurants so he'll know his onions. Good luck to him, and he'll absorb any difficulties short-term. But I saw Jamie Oliver show the margins and how tight they are between losses, break even, profit. Soups and high margin dishes (the cheaper dishes often make more than the expensive ones), 3 courses instead of 2, another drink, coffee etc.
