Any recommendations for really strong hard cheese(not Terry Thomas). Gruyere is hard, not strong but with a distinctive smoky subtle flavour - best bought in slabs rather than bricks, tastes better that way for mysterious reasons, bit like tea is nicer in a cup than in a mug

A number of years ago I was lucky enough to be able to visit a number of Italian cities where the company I worked for had business interests, travelling through the country we visited a number of family owned restaurants, many had a small table in a corner with a large round Parmigiano Reggiano on it with utensils so that waiters & diners could help themselves to as much as they wanted - really excellent trip -
